This is an easy go-to salad to meal prep with bright, Mediterranean flavours. It keeps in the fridge for 4-5 days and even gets better with time!
Lentils are a delicious, versatile, and economical source of protein, fibre, folate, and iron.
Prep this salad on the weekend and use throughout the week as a side at dinner, lunch, or even a snack!
You can use canned (and well rinsed) lentils or cook your own. We suggest a brown, green, or black lentil for salads as they hold their shape. Red split lentils tend to fare better in baking/soups/stews as they do not hold their shape as well.
The Greek-style dressing will make more than needed for the salad – use it for green salads throughout the week!
GREEK-STYLE LENTIL SALAD
Serves 4
Ingredients

2 cups cooked* brown, green, French green, or black lentils (or canned and rinsed well)

3/4 cup diced English cucumber

3/4 cup quartered cherry tomatoes

3/4 cup chopped green or red pepper

6 tablespoons diced red onion

1/3 cup feta cheese, crumbled

2 cups chopped kale (optional)

1/4 cup chopped parsley (optional)

1/4 cup kalamata olives (optional)
Greek-style dressing
-
1/3 cup extra virgin olive oil
-
1/4 cup freshly squeezed lemon juice (bottled will not taste the same!)

2 large cloves of garlic, minced, or 3 small cloves, minced

1 teaspoon Dijon mustard

1 1/2 teaspoons dried oregano

1/2 teaspoon black pepper
-
1/2 – 3/4 teaspoon salt (according to your taste!)

3/4 teaspoon sugar or honey
Directions
In a medium-sized bowl, combine salad ingredients.
In a small bowl, combine dressing ingredients and whisk well to combine, or blend with a hand blender for an even smoother dressing.
Pour 6 tablespoons or so of the dressing over the salad and mix well to combine. You can also add even more veggies if you’d like and you will need extra dressing if that’s the case. Taste and add more dressing if desired!
Store covered in fridge and wait at least 2 hours before enjoying to allow flavours to meld together (although can be eaten right away also).
Keeps well in fridge for 4-5 days.
Dressing will keep in fridge for a week.
*To cook your own lentils, follow package directions as cooking time varies on the type of lentil.
